Stuffed Red Bellpepper


Breakfast-Lunch:
I know, I know, I know! Presentation isnt the greatest... but I had time to whip something up after days of not cooking. I felt bad, (even though I have no readers) but I felt like I wasnt accomplishing my goal to sufficiently cook a vegetarian meal everyday. But I guess, I can settle for leftovers... even if I didnt cook them (cough, mom's Pinakbet). But this is what I ate for breakfast... oh my. I was so AMAZED of what a little creativity and curiosity could do when I'm starved in the morning and eager to leave the house. I was kind of doubting myself upon how I'd cook bell peppers (since I've only cooked bell peppers.. like once. But they were chopped for the Ratatouille!) and so I was getting iffy of how long it would take.. and if I was doing it right... BUT! In the end, I learned that the bell pepper actually change color as the heat gets trapped inside the vegetable. I was trying to speed the cooking process up by putting a lid over it as to steaming it. I guess I was cooking it right because by the time I knew it, it was nice and tender to the touch! Then I brainstormed and thought about mincing some zucchini and putting it in egg. Which turned out to be the best decision ever! It tasted like heaven as I sauted the zucchini first and added some B.peppers, Sea salt, and as well as a dash of Sesame seed oil (this stuff is amazing!). And so I scrambled the eggs, then dropped the zucchini in... and boy. mm' mm' mmm'! And to top it off, I put wild rice on one side of the bell pepper, as seen above. and put mostly egg on the other half. Sprinkled it with Gonzola cheese and my gosh. This stuff is so delishh!

I mean.. I couldnt eat it all.. so basically. I met up with my ex so he could be my disposer hahaha. Thanks Mike!

P.s. Ignore those tomatoes.. I really didnt use them in this dish... but I did eat them for a snack when I got home! hehe

Dinner: I will be making Kway Tao. Which I probably spelled wrong.. but it is a flat noodle (like Pad see ew?)  It's like the Chinese version of the thai version of Pad see ew. Pictures will be included as of 7 or 8 O'clock tonight!
