Egg whites with Corn & Fried tofu + Toast

Good Morning :]
I made a simple egg white with corn. Then I had a craving for some tofu. My mom helped me fry these prior to me not knowing how or what to do with them xD enjoy! 
I went to UCR to check out their Botanical Gardens with mike. Actually.. more like him surprising me (: hehe

 
It was so lovely over there. It inspired me to experiment with greens and mushroom (:

Egg white Asparagus

First, Seperate the egg yolk from the egg whites. Then beat eggs til fluffy..and this... apparently takes FOREVER. but itssoooo worth it (:
Well.. I didnt show the step of steaming the Asparagus.. but you do that! haha! and then after asparagus is tender you then soak them in the fluffy whites and put it in the pre-heated pan. Dont forget to add oil to your pan!




 
Dont pour too much! Unless you like it that way (:

Expired Hamburger Helper

I didnt realize it was expired till I got done cooking everything.... And it taste funny.. -___-


If anything... I'm beginning to think that SEAFOOD is just waay too close to reach -____- and I dont know if this Hamburger helper is giving me a tummy ache or the cheese... :[ To make it even better, I'll wash everything down with MILK ... aaaahhh latcose delight.

UPDATED FAILURE

So. Vegetarian? OUT OF THE QUESTION. This whole week was the most SEAFOOD filled week ever.
I was so loyal to my diet..until. I saw the Fishballs, smoked salmon, and SUSHI. I feel like quitting.. but I MUSTNT( soooo not a word). BUT, to make things worse... I'm getting so frustrated at cooking. I hope I get into the culinary class at RCC...

Rain Rain go Away :]


It's tuesday (kinda like a monday since we had no school)
I'm seriously craving a simple soup. Soo.. For a lunch/dinner.. I'm making that..
BUT! I will not only be making that... But  i believe I will be attempting something with Chickpeas... maybe. If not. No worries (: there will be something here today! I guarantee.. first dishes... then eat.. then... COOK :{]
Eff homework for now... hahaha it will be done later.








BREAKFAST

A simple egg,spinach, garbonzo cheese, onions, and garlic omelette.
1/2 onion
1 garlic
sesame seed oil
olive oil
2 eggs
a handful of spinach.
Sea salt
and pepper to taste.
It was pretty good with rice.. and hot sauce.. and wrapped in a sea weed wrapper... haha (:
WELL Since I've been lagging..I decided I needed change... first I started with my hair...

Dinner:




Okay heres the deal. It's called vagina. KNOW WHYY?!?! Cause I'm so fuggin frustraited... if you still wanna know.. It's a pasta salad with gonzola(sp) cheese... wheat spiral pasta, 1/2 green bell pepper, beats, pineapple, artichoke, and spinach. wooooh. If you wanna know how to make it (which I believe, I have NO readers hehe) just message me.
-So then. This stuffed eggplant here, taste... good? I think I just need to batter it up with some olive oil, in which I dont have by the way.. But anywho. It consist of tomato, spinach, eggplant, potato, gonzola cheese, artichoke, pineapples!

I know..

It's been almost a week.. five days exactly and yet, NOTHING COOKED -___- literally.
So heres the deal. I know I've been lagging.. and Bernice if you're reading this (thanks for being a reader) haha never knew I had readers! But...
Tomorrow. I will research, read, or think about what to cook...
But recently I've been struck with a massive case of lactose in tolerance. So... No cheese :[
WHICH in fact, I love cheese. I love cooking with cheese.
Anyways, tomorrow. HOPEFULLY.

Stuffed Red Bellpepper


Breakfast-Lunch:
I know, I know, I know! Presentation isnt the greatest... but I had time to whip something up after days of not cooking. I felt bad, (even though I have no readers) but I felt like I wasnt accomplishing my goal to sufficiently cook a vegetarian meal everyday. But I guess, I can settle for leftovers... even if I didnt cook them (cough, mom's Pinakbet). But this is what I ate for breakfast... oh my. I was so AMAZED of what a little creativity and curiosity could do when I'm starved in the morning and eager to leave the house. I was kind of doubting myself upon how I'd cook bell peppers (since I've only cooked bell peppers.. like once. But they were chopped for the Ratatouille!) and so I was getting iffy of how long it would take.. and if I was doing it right... BUT! In the end, I learned that the bell pepper actually change color as the heat gets trapped inside the vegetable. I was trying to speed the cooking process up by putting a lid over it as to steaming it. I guess I was cooking it right because by the time I knew it, it was nice and tender to the touch! Then I brainstormed and thought about mincing some zucchini and putting it in egg. Which turned out to be the best decision ever! It tasted like heaven as I sauted the zucchini first and added some B.peppers, Sea salt, and as well as a dash of Sesame seed oil (this stuff is amazing!). And so I scrambled the eggs, then dropped the zucchini in... and boy. mm' mm' mmm'! And to top it off, I put wild rice on one side of the bell pepper, as seen above. and put mostly egg on the other half. Sprinkled it with Gonzola cheese and my gosh. This stuff is so delishh!

I mean.. I couldnt eat it all.. so basically. I met up with my ex so he could be my disposer hahaha. Thanks Mike!

P.s. Ignore those tomatoes.. I really didnt use them in this dish... but I did eat them for a snack when I got home! hehe

Dinner: I will be making Kway Tao. Which I probably spelled wrong.. but it is a flat noodle (like Pad see ew?)  It's like the Chinese version of the thai version of Pad see ew. Pictures will be included as of 7 or 8 O'clock tonight!

Breakfast, Lunch, and Dinner


Mom's breakfast. I ate half and put it in a pita bread. MMMM' tasty.










Dinner&Lunch:  So I made Ratatouille. It's not bad... I mean compared to that veggie burger, I give it a 4.5/5! yum! It took not that long to make... But then again, I was missing the basil leaves and I forgot what else. I'm so sleepy. But for the sake of me going to forget tomorrow. I shall post pictures now.





mmm Prep. Saute. and Serve. The oranges really topped it off. Gave it that really fresh feeling that I needed (:
Had to say I really liked my dish. Oh, also I cooked Lemon herbed wild rice that I found at Winco.. but really wasnt all that lemon-y. more like bland. So I added chicken broth and some sea salt and voila! The dish was perfecto.

SO... overrall. This I will be definitly cooking again. So easy to make. I'm actually getting the hang of cooking and stuff... soon enough... I'll be moving out and into the big world MWAHAHAHAHA :]]

Pre-Planning Meals

My mom says to pre-plan my meals since I went to the library yesterday and got 3 Veggie books :]]




Breakfast: Mom wants what I made yesterday: A Onion, olives, chives and mushroom infested omelet with a hint of sweet soy sauce.
For my breakfast, I will probably be trying out something with the round bread bowls my dad bought. If unsuccessful. I will still post up pictures (:







Lunch: Falafel . It is the original "Veggie Burger" which is popular around New York and the Middle East. Of course my version of Falafel will not look like this... but. Hopefully it will be tasty. None of my ingridients will (lets hope not) be tried to the fryer. I need to stay away from that oh so goodness.
Next, I will also be making a Garlic, Chickpea, and Spinach Soup. Mom picked it out and I suppose we're saving this for dinner as well?



Dinner: undecided. But  I suppose we can eat that Chickpe soup.

Decided: I'm going to attempt to make the beloved movie Ratatouille. Wish me luck.

Making the Mushroom Veggie Burger

I forgot to bask the shiitake mushrooms in water and now... I'm going to have to wait to do saute everything -___- I wonder how it will taste it with a few ingriedents missing... I might add some tofu for some experimenting in the next batch I'll make... but ah. Here are some photos I took as I wait:

A very lonely onion minced to perfection in my heavenly mincer. Made me cry so I put it to the corner

I just wanted olives on everything today xD


Stir fry till all moisture was gone -_- bad idea.


...because these were dry.


Overrall. These were okay. I made the sauce out of half an Avocado, half a tomato, sugar, and green onions
I would rate these to be 3/5 prior to it being so darn dry! But I mean.. my dad liked it...

fuck.

Mushroom Veggie Burger

I found one on About.com. It looks and sounds delicious! Had good reviews. I'm going to cook this for lunch or dinner, I needa head to the store for some mushrooms.
Mushroom Veggie Burger Recipe

This mushroom burger recipe is adapted from "Lisa's Mushroom Burger" from weheartfood.com, and to call it a veggie burger doesn't do it justice. Veggie burger recipes tend to be bland and boring, but this meaty mushroom burger is anything but.

Makes 4 Large or 6 Smaller Mushroom Veggie Burgers

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 3 tbsp olive oil
  • 1 1/2 lb mushrooms, roughly chopped (combination of crimini, shiitake, and Portobello)
  • 1/2 cup finely chopped onion
  • 6 cloves minced garlic
  • 2/3 cup rolled oats
  • 1/3 cup shredded Parmesan
  • 3/4 cup breadcrumbs
  • 2 eggs, beaten
  • 1 tbsp chopped fresh parsley, or 1 tsp dried parsley flakes
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation:

Heat 1 tbsp oil in large saucepan. Saute the mushrooms, onions and garlic over medium heat for about 10 minutes, or until the liquid boils off, and the mushrooms begin to saute.

In large bowl, add mushroom mixture to oats, Parmesan, breadcrumbs, eggs, parsley, oregano, salt and pepper. Mix well. Allow to sit for 15 minutes to develop the flavors. Shape into patties. Heat 2 tbsp oil in large non-stick skillet, over medium heat. Fry patties, cooking about 5 minutes on each side, or until golden brown.

Serve with your favorite burger toppings.

Veggie Burger



I ate at Mimi's Cafe yesterday and really liked their Veggie Burger. So tomorrow.. err techniqually today I will make one. It seems really exciting to make because I've never really attempted to make one. So this will be fun!
If I remember I will post pictures tomorrow... what a long busy day tomorrow will be.

I wanted to start this "Vegetarian Recipe Blog" on the 1st...

But then I havnt got around to buying it yet... Ever watched Julie&Julia? My inspiration came from there. I havnt been a full vegetarian. I've always had a short period of time that I would become one.. and so now is the time to work my way up from being a pescetarian to being a full time vegetarian.
Baby steps...
I couldnt remember which date this was. But my mom made Plautes (sp) which consists of potatos, tomatos, and other heavenly ingredients that I was not aware of. And of course. I made a salad that consists of the greens, oranges, cheese, tomatoes, and ranch---- YUM!

So this blog is basically a (hopefully) daily or weekly thing. I will try to blog about my steps towards my change of diet... and as well as the recipes I will be following from a cookbook, online recipes, and other inspirational things that come to mind.
and of course. Pictures will ALWAYS be included ^_^
